Our Family Favourite Handcrafted Vanilla Cake:

Vanilla GateauSuitable for Vegetarians
Preparation Time: 15 Minutes
Cooking Time: 25 – 30 Minutes
Servings: Up to 12

 

For the Cake:

4 Free Range Eggs at room temperature
225G Caster Sugar
225G Self Raising Flour
2 tsp Baking Powder
225G Irish Unsalted Butter, at room temperature

Blend these ingredients together in a Glass Bowl for the Buttercream:
125G Butter
175G Icing Sugar
Vanilla Extract (Optional)

 

METHOD:

Preheat Oven to 180°C / 160°C Fan/Gas 4 (Cooking appliances may vary and this serves only as a guideline)

Grease and Line two 8” cake Tins.

Cream the Sugar and Butter Together. Scrape the bowl.

Sieve the Flour and Baking Powder into a bowl and fold together with the Butter mixture.

Stream in the egg and mix Until the mixture is Smooth.

Divide the mixture evenly between the tins.

Bake the cakes on the middle shelf for 25 min. 

The cakes are done when they are golden brown and slightly pulling away from the edge of the tins. The cakes should slightly bounce back when touched.

Set aside to cool for 5 min before removing from the tins.  Once the cakes are removed, let them cool completely on a drying rack.

To complete your cake, assemble with the Buttercream and decorate on top and sides if required.
